Watermelon Cucumber Couscous Salad

Let’s enjoy watermelon before it disappeared from shops.

This summer salad is one of my favourite. It is ready in no time and you get a mix of flavours and textures in your mouth…sweet watermelon, lemony vinaigrette, fluffy couscous and crunchy cucumber.
And don’t forget mint and parsley, you can add as much as you want and make this salad look as green as Tabbouleh salad.



Ingredients: (2 servings)

½ cup instant couscous
Salt
Olive oil

½ cup cucumber, peeled and finely diced
1 cup parsley, finely chopped
2 green onion, chopped
2 cups watermelon, small cubes
1 tbsp fresh mint, chopped (or more)

Vinaigrette:
2 tbsp fresh lemon juice
3 tbsp extra virgin olive oil
Salt & pepper to taste
 
Directions:
To cook the instant couscous, I coat the grains with some olive oil, add salt and then pour boiling water over it. I cover for 5 minutes until the couscous has absorbed all the moisture.

Fluff the couscous up. Transfer to a bowl and let stand, uncovered, until cooled.

Toss with cucumber, parsley, green onions, mint and vinaigrette.

Gently fold in watermelon before serving.
